Take a class from a Duchess, a chef, a cookbook author, visit a wine or olive oil estate - and simply enjoy all that this magical place has to offer, all the while indulging in great food and wine and meeting the warm Sicilian people.


There is no better way to learn the cuisine of a region than by taking a cooking class from someone who knows the local food and produce. Depending on where you are staying in Sicily, choose from one of the many options below. 1. LA CUCINA DEL SOLE – MOUNT ETNA (NEAR TAORMINA)

 

A noted authority on Italian and Sicilian gastronomy, Eleanora Consoli had lived for many years in her house in Viagrande, on the slopes of Mt. Etna near Catania. Here, surrounded by orange groves and vineyards which flourish in Mt. Etna's fertile soil, the sensual pleasure of Sicilian cuisine comes alive. The late Eleonora was the author of the book in 2 volumes, Sicilia - La Cucina del Sole, a collection of 486 Sicilian recipes, with quotations from authors associated in some way with the cuisine of the island. Other books published include Cucina del Sole - La Buona Tradizione Siciliana, Autunno - Cucina delle stagioni, Inverno - Cucina delle Stagioni ("Autumn" and "Winter", the first two books of a series dedicated to seasonal recipes) - Agrumi (citrus fruit), Le Olive (the Olives) and Cucina Casalinga Siciliana, published in Japanese.

 

The courses are now held by Eleonora's daughter, Monica, who has learned everything from her famous mother. The classes take place in a typical Sicilian house of the 18th century, surrounded by green countryside. The area is known for its orange and lemon groves, vineyards producing DOC wine (the red, rosé and white wines of Etna).The lesson is orientated towards direct exchange with the students, in a pleasant atmosphere, with the aim of conveying not only the cuisine but also the culture, traditions, habits and customs from which it stems. The courses are based on the more famous Sicilian recipes, focusing on pasta, fish and vegetable dishes. Other courses available on request include: Italian cuisine, Haute cuisine, Country-style cookery, Plate and table decoration, Etiquette, Ecole ménagère, Quick recipes, Hand-made pasta, Lectures and tasting of olive oil, Lectures and tasting of Sicilian and/or Italian cheese. Standard cooking class time: 3 hours plus lunch or dinner with tasting of the dishes prepared.

2. CATANIA (NEAR TAORMINA)

 

Visit the food and fish market with the chef and then enjoy a cooking class in a restaurant in Catania city center. With all the fresh ingredients bought at the market, you will prepare four different dishes: a starter, “primo”, main course and dessert. Lunch at the restaurant with follow with a full menu of the four courses.

3COOKING IN ORTIGIA (SIRACUSA)

 

Join a great cook in the historic center of Siracusa for hands-on traditional Sicilian cooking. You will explore the Ortigia food market to buy the ingredients for your lunch!

 

A traditional kitchen is your classroom for your hands-on cooking classes. All menus are based on the season and may include: beccafico fish, cherry tomatoes, caponata, fresh fish, pasta with aubergines (eggplant) and zucchini.

4. COOKING CLASS IN PALERMO

 

You will meet the chef to venture to one of Palermo’s historic markets at 9:30am (Il Capo, La Vucciria or Borgo Vecchio) where you will purchase all the ingredients necessary to prepare your meal. Along the way, you will also taste some of Palermo’s most typical foods, such as "panelle" and "pane con la milza". The hands on cooking class is held in the kitchen of a typical restaurant. The dishes you've prepared will be served with just the right Sicilian wine and dessert accompanied by local biscotti and Sicilian dessert wine. The experience will end around 1:30/2pm.

5. COOKING CLASS WITH THE DUCHESS IN PALERMO

 

Follow the Duchess of Palma in a fascinating itinerary through Sicilian culture and cuisine. The itinerary begins with a morning visit to the Capo market, the oldest in Palermo, where we will buy fresh seasonal ingredients, chosen amidst the colouful stalls glowing with fruit, vegetables, fish, meat, resounding with the "abbanniate", the sellers’ cries to attract customers. You will see foods you have never seen before! Then a short stroll home to savour the hidden beauty of Palermo, one of the most intriguing and mysterious cities of the Mediterranean, will take us past the baroque magnificence of the Quattro Canti along via Alloro to the luxuriant exuberance of Piazza Marina garden and the austere majesty of the Norman palazzo Chiaramonte. Once home, the spacious kitchen of the palazzo by the sea, comprising of the warmth of the shining old copper pots together with the coolness of the blue and white Sicilian tiles, welcomes us. Finally, our Sicilian fare will be enjoyed in the magnificent dining room of the palazzo, together with the Duchess and her family.

 

After lunch, a fascinating tour will take us through the splendor of the exquisite and beautifully restored 18th century palazzo by the sea, the last home of Prince Giuseppe Tomasi di Lampedusa, author of the world-famous novel "The Leopard". Our day will conclude with a visit to the luxuriant terrace facing the sea, fragrant with jasmine, wisteria, hibiscus and bougainvillea.

6. COOKING IN A WINE ESTATE (BETWEEN PALERMO AND AGRIGENTO)


Arrive at 10:00 a.m. in the beautiful country between Palermo and Agrigento, to one of the most important wine-producing estates in Sicily. Our cooking teacher and cookbook author, conducts cooking classes, as she has for more than 15 years, at Casa Vecchie, in the middle of the vineyards.

 

Today she will share her knowledge of local cuisine and its history and you will learn how to prepare the caponata, arancini and cannoli with ricotta cheese. Lunch. In the afternoon you will explore the countryside and enjoy the vineyards. A look at the wine cellars with her immense barrels and tasting of the various wines will accompany the dinner.

7. COOKING SCHOOL ON MADONIE MOUNTAIN (GANGI)

 

Driving through the Madonie Region you will arrive in Gangi, where you will meet our teacher at her cooking school. She is two-time James Beard Award winners for "Best Italian Cookbook.": 100 Ways To Be Pasta, Sicilia Home Cooking. She will be ready to teach you the tricks of natural and simple flavors. You will enjoys the foods made in class during lunch.

8. COOKING AND OLIVE OIL TASTING IN AGRIGENTO

 

You will arrive at the olive estate in the morning and will meet your hosts who will take you for a visit of the estate, the oil mill and the farm. Special Extra Virgin Olive Oil Tasting with the owner.

 

10:00/ 4:00 p.m. Your hostess offers special cooking courses for guests, in which typical ingredients and tasty traditional recipes will be emphasized, as well as revealing the little tricks of Sicilian cuisine. Favorite recipes include anelletti al forno (baked pasta rings), pasta con le sarde (with sardines),polpettone (Italian meatloaf), stir-fry "da strada" ("on the road"), and especially desserts with almonds or ricotta cheese.

9. COOKING AT A BED AND BREAKFAST IN SICILY (AGRIGENTO AREA)

 

Take a hands on cooking classes with a vibrant and talented up and coming chef who has loads of personality and even more importantly is a talented professional serving up creative and incredible dishes. I ate here while in Sicily and was enormously impressed with his innovate dishes, presentation and overall passion for the food that he prepares. He uses the surrounding ingredients, fresh and simple, coming up with some divine delicacies. The classes take place in his small, but very well equipped, restaurant kitchen located in a totally renovated bed and breakfast which was formerly an aristocratic dwelling, located in the middle of a typical Sicilian village.

10. COOKING CLASS WITH OLIVE OIL TASTING AND FARM TOUR AT AN OLIVE ESTATE

 

Visit a private extra virgin olive oil estate in Sicily for a cooking class and tour of your beautiful surroundings for the day.

11. COOKING CLASS WITH A 1 STAR MICHELIN CHEF IN TAORMINA

 

You will meet your great chef at his cooking lab in Taormina where he will guide and oversee the cooking lesson, illustrating his best techniques on how to cook delicious dishes. Through the interplay of flavors and senses, the kitchen will become his stage enabling you to observe his process and learn through a hands-on experience.

12. MARKET VISIT AND COOKING CLASS IN TAORMINA

 

You will meet your chef at 9am at a central meeting point in Taormina. You will be then be led on a guided market tour to choose your food for the hands on cooking class - the vegetable stands, the fishmonger - a truly authentic experience! After the market tour, you will go to the kitchen of a restaurant for the class.  You will learn how to prepare a full Sicilian menu including a typical Sicilian dessert and will enjoy the fruits of your labor for lunch, with good Sicilian wine of course! Available every day excluding Sunday. Lunch will end around 2pm.

13. COOKING IN CEFALU

 

You will arrive on your own at the villa in Céfalu at either 11:30am if you'd like a morning class with lunch, or 4:30pm if you'd like an afternoon class with dinner. Enjoy a leisurely hands on cooking class with your experienced chef, learning to prepare a four course meal. Following your lesson, enjoy a delicious lunch (or dinner if taking the afternoon class) of what you have prepared - paired with a good bottle of Sicilian wine and home-made limoncello.
