 POMODORINI SCATTARISCIATI 

 
 

Serves 6

1 lb. 2 oz of cherry tomatoes or datterino type

2 tablespoons off extra virgin olive oil 

2 or 3 white onions, cut into thin slices

10 basil leaves

 Method

Wash and dry the tomatoes. In a frying pan or a wok put the oil, the onion, the basil leaves, the tomatoes and hot pepper if you like. Pay attention: cover the pan with a lid because they can burst. Saut√© all at a very high heat, stirring and crushing the tomatoes. Simple and easy to implement, they are great as a side dish or as a sauce for pasta or to make a drink with some friselline.
